Chef Sam started his career with the eastern-based Ponderosa Steak House, quickly rising through the ranks to the position of District Manager in Chicago, Illinois, and then Olympia, Washington. When the opportunity came to establish his own restaurant and catering service, he welcomed the chance, opening the Harborside Restaurant and Italian Deli, then progressing to the more exquisite Pellegrino’s Italian Gardens, a fine dining restaurant.
In 1995, he transitioned his years of experience into full-time catering, serving over 100,000 guests yearly in events ranging from casual business lunches to international black tie Governor’s receptions. Throughout Thurston County, including Washington’s seat of state government, Sam’s reputation is unequaled. He has been individually hand-picked to cater events involving numerous government agencies, to include the Department of the Army, the Washington National Guard, the state Executive Branch and Legislature, nearly all state departments, Thurston County, and the cities of Lacey and Olympia. For 10 years, he has been asked to provide his catering expertise to benefit the Thurston County Employee Picnic, which serves nearly 500 employees yearly. Among his most prestigious accomplishments has been serving 1,500 American and Japanese guests during the Governor’s Sister State Reception in the Capitol Rotunda.
His catering experience is not limited to government services or Thurston County. In fact, he has been the catering service of choice for a number of monthly, quarterly, and annual events of all varieties in Thurston, Pierce, and Lewis Counties, regularly serving the Olympia-Thurston County and Lacey Chambers of Commerce, Association of Washington Business, the American Legion, The Retired Officer Association, Kiwanis, Elks, and nearly all service clubs in the region. He caters events for churches, banks, department stores, dentists, doctors, vintage automobile clubs, and wholesalers, treating each with equal professionalism, responsiveness, and exceptional service. As a result, Sam and his staff have been repeatedly invited to serve the black-tie fundraising “Smart Auction” for St. Michael’s School, an event which normally draws up to 400 guests.
As a Certified Food Service Manager, he has been granted an exceptional level of trust by the Thurston County Health Department, which has been repeatedly validated through his near-perfect Health Inspection record since 1992. His customers can rest easy knowing that he runs his operation in a manner consistent with the highest standards of food safety and health.
Earlier this year, Sam’s Italian Kitchen location was honored by The Olympian’s Best Of South Sound with placement in the Top Three selected Italian Restaurants, a tremendous achievement for a small restaurant with only one location!
